Behold - Coconut Red Bean Quinoa!
I didn't have any kidney beans so I used aduki, and it was just as lovely. Wonderful warmth from the ginger and the comforting creamy goodness of coconut milk. I am already eyeing the recipe for sweet potato black bean burgers with millet and leeks, but that will have to wait for another day.

Sounds like you enjoyed the cooking. It's really nice trying new stuffs in the kitchen and find out that it tasted good the first time you did it. :)
